preperation

  1. Make the cocoa cream. Pour 50 g of water over 12 g of gelatine and leave to swell.

  2. Place the curd, kefir, sweetener and cocoa in a bowl and whisk until smooth.

  3. Melt the gelatine in the microwave (I put it in for 20 seconds) and add to the mixture. Whisk well and pour into 4 bowls (~160 g each) and set in the fridge.

  4. Make the cherry layer. Place 400 g cherries with sweetener in a saucepan and bring to a boil.

  5. Add 12 g cornstarch to 50 g water and add to the cherries. Bring to the boil, stirring. Set aside to cool.

  6. Make the white chocolate layer. Place 80 g white chocolate in a bowl, add 50 g milk and place in the microwave for 20 seconds to melt the chocolate. Stir.

  7. Finish the dessert. Place 100 g cherries in each of the bowls and top with ~25 g white chocolate.

  8. Decorate to your liking and place in the fridge to let the dessert set a little.
