Carrot and dried fruit fruitcake

With healthy wholemeal flour, no sugar, no fat! Here's a delightful and delicious carrot-dried fruit fruitcake.

Melnā tēja Apsara Earl Grey 100g

6 Olas

360 grams Žāvēti augļi un ogas (man pa 60 g: aprikozes, žāvētas dzērvenes, plūmes, rozīnes)

300 grams Burkāni

300 grams Kefīrs (2%)

300 grams Pilngraudu kviešu milti

100 grams Rieksti (man valrieksti)

50 grams Apelsīna sula

2 tējkarote Soda

Ingvers, piparkūku garšviela

preperation

  1. Kefir is punished and left to act.

  2. Grate the carrot on a fine grater.

  3. Add the eggs, flour and spices to the carrots.

  4.  If necessary, cut in the dried fruit and berries.

  5. Add the cut fruit and berries to the batter.

  6. Place the dough in the tin and bake in the oven at ~160-170 °C for ~50 to 90 minutes (depending on the diameter and depth of the tin. I had a tin of 18-20 cm diameter and quite deep, so it took almost 2 hours to bake. I recommend covering the top with foil to prevent it from burning).

  7. 10 minutes before finishing baking, remove from the oven and drizzle with orange juice.
