Syrniki with chia seeds and apricots (with soy protein)

Šķīstošā kafija Rimi Freeze Dried 200g

1 Egg

400 grami Skimmed milk curd (dry, grainy curd required, not packaged curd)

75 grami Ripe apricots

30 grami Chia seeds

20 grami Soy protein

20 grami Rice flour for coating

3 grami Oil

Vanillin

Sweetener of your choice

preperation

  1. Beat the cottage cheese and eggs into a smooth mixture.

  2. Add the chia seeds, protein powder and sweetener, and knead the dough. Place the dough in the fridge and leave it for at least 30 minutes (I knead the dough the night before and bake it the next day, allowing the chia seeds to swell properly).

  3. Divide the dough into 5 equal parts (~507 g each) and roll into round balls.

  4. Form small patties with your hands, placing a piece of apricot in the middle. Seal tightly and roll in rice flour. Repeat with the remaining 4 balls.

  5. Place on a slightly heated pan (I set the heat to 5 out of 9) and fry under a lid for about 8 minutes on one side and about 4 minutes on the other.
