Pumpkin omelette with cheese and scallions

Omelettes are always a great for breakfast. Here's a delicious variation with pumpkin.

Augļu produkts Pūre Smēriņš zemeņu 77,7% 410g

2 Olas

100 grams Svaigs ķirbis

70 grams 10% siers

20 grams Zaļie lociņi

preperation

  1. Grate the pumpkin finely and mix with the eggs. Add salt and spices of your choice.

  2. Pour the mixture into a pan lightly greased with oil and fry at a very low temperature for ~10 minutes on one side.

  3. Using a plate, flip the omelette and bake for ~3-5 minutes on the other side.

  4. Sprinkle the grated cheese mixed with the cut scallions on top of the omelette. Put the lid on and let it fry for another ~2 minutes.

  5. Fold the omelette in half with a wide spatula and enjoy a delicious breakfast.
