Omelette with pumpkin, cheese and boiled egg

An omelette is always a great option for breakfast - this time with pumpkin and a boiled egg.

100 grams Svaigs ķirbis

20 grams Dilles

preperation

  1. Grate the pumpkin finely and mix with the egg and egg white. Add salt and spices of your choice.

  2. Pour the mixture into a lightly oiled frying pan, spread and fry on the lowest heat for ~10 minutes on one side, until golden brown on the bottom

  3. Sprinkle the grated egg and cheese mixed with the dill over the omelette. Cover and bake for ~2 minutes.

  4. Fold the omelette in half with a wide spatula and enjoy a delicious breakfast.
