Pumpkin-Celery Soup with Ginger and Chia Seeds

2 litri Water
1645 grami Pumpkin
350 grami Celery root
80 grami Onion
30 grami Ginger root
170 grami Cream cheese with greens "Latgale" (7,5%)
Spices of your choice (I also added turmeric)

Cut the pumpkin, celery and ginger into pieces and place in a pot. Add water and boil until the vegetables are soft.

Blend, add melted cheese and stir. Do not boil the soup; instead, heat it gently.

When serving, stir a spoonful (20 g) of chia seeds into a warm portion, and sprinkle with pumpkin and sunflower seeds (10 g).

For garnish, add roasted pumpkin seeds. You can also use roasted rye bread croutons.
