Curd and Cumin Cheese Breads

Instead of bacon pies, I bake healthy, protein-rich cumin cheese and curd breads.

Rīsu, griķu galetes Rimi 100g

2 Eggs

300 grami Skimmed milk curd

150 grami Cumin cheese "Līgo"

90 grami Flour (I use corn flour. The amount of flour depends on how wet the curd is)

10 grami Psyllium (not essential, but it makes the bread rise nicely)

1 tējkarote Baking powder

Herb salt, dried garlic, cumin seeds

preperation

  1. Blend the low-fat cottage cheese with the eggs, add the grated cheese, flour, baking powder, herb salt, and herbs, and knead the dough.

  2. With wet hands, divide the dough into 6 equal parts and shape into small loaves (I put them in 10 cm silicone tart moulds).

  3. Bake in an oven preheated to 175-180 °C for ~20 minutes.
