Curd-Vanilla Dessert with Berries and Fruits

preperation

  1. Pour 40 g of gelatin with cold water and set aside to swell.

  2. Cut the apricots and strawberries into small pieces.

  3. Blend the curd, protein drink, and sweetener into a smooth mixture. Add the cut fruit and berries to the mixture.

  4. Place the soaked gelatin in a bowl of hot water (or, as I did, melt it in the microwave with 2x 20-second pulses).

  5. Add the dissolved gelatin to the curd and fruit mixture (the mixture must be at room temperature). Then, pour it into a mould. I use a mould with removable sides, which I line with cling film on the inside.

  6. Allow to freeze in the refrigerator.

  7. Put the berries, sweetener and 200 g of water in a saucepan. Bring to the boil.

  8. Add 15 g of cornstarch to 120 g of water, stir, and add to the berries in the saucepan.
