Pumpkin Loaf Cake with Dried Fruit and Walnuts

Pupiņas Kok tomātu mērcē 400g/240g

3 Small eggs

80 grami Egg white

200 grami Fresh pumpkin

190 grami Dried fruit/berries (I have apricots, dried cranberries, and raisins)

150 grami Kefir 2%

150 grami Whole wheat flour

40 grami Nuts (walnuts for me)

1 tējkarote Soda

1 Orange juice

Ginger, cinnamon

Sweetener of your choice

preperation

  1. Kefir is punished and left to act.

  2. Grate the pumpkin on a fine grater.

  3. Whisk the eggs with the egg white. 

  4. Add the grated pumpkin, flour, and spices.

  5. If necessary, chop the dried fruit/berries and add them to the dough.

  6. Place the dough in a baking tin and bake in an oven at ~160-170 °C for ~50-90 minutes. The baking time depends on the size of your baking tin. My baking tin is 10 x 25 cm. After ~20 minutes, cover the tin with foil to prevent the top from burning. Remove the foil before the end of baking.

  7. 10 minutes before the end of baking, remove the loaf cake from the oven, sprinkle with orange juice and return to the oven.
