Egg-White Flatbread with Psyllium and Flaxseeds

If you're on a “diet,” this flatbread makes a great substitute for a piece of bread. It's low in calories, high in fibre, and packed with protein.

  1. Pour the egg whites into a bowl. Add the psyllium, salt, and spices. Whisk everything thoroughly (I use a hand blender).

  2. Add the flaxseeds and herbs, and stir.

  3. Place the mixture in a pan, spread it out with a spoon like a pancake, and cook it over very low heat with the lid on.
