Pumpkin-Celery Soup with Ginger and Chia Seeds

It gives a great feeling of satiety and warms up on cool evenings.

2 litri Ūdens

1645 grams Ķirbis

350 grams Selerijas sakne

80 grams Sīpols

30 grams Ingvera sakne

170 grams Krēmsiers ar zaļumiem „Latgale” (7,5%)

  1. Cut the pumpkin, celery and ginger into pieces and place in a pot. Add water and boil until the vegetables are soft.

  2. Blend, add melted cheese and stir. Do not boil the soup; instead, heat it gently.

  3. When serving, stir a spoonful (20 g) of chia seeds into a warm portion, and sprinkle with pumpkin and sunflower seeds (10 g).

  4. For garnish, add roasted pumpkin seeds. You can also use roasted rye bread croutons.
