Vanilla Pudding-Curd Dessert with Raspberries

An incredibly delicate and delicious dessert.

Olu nūdeles Alb-gold Hutchen 500g

600 grams Vaniļas pudiņš “Milbona”

300 grams Kulinārijas biezpiens "Baltais"

125 grams Avenes

25 grams Želatīns

100 grams Ūdens

16 grams Vaniļas cukurs

  1. Pour cold water over the gelatine and leave to swell.

  2. Place the vanilla pudding, culinary curd, vanilla sugar, and sweetener in a bowl and whisk until smooth.

  3. Add the berries to the mixture.

  4. Place the soaked gelatine in a hot water bath (or melt it in the microwave with 15-second pulses)

  5. Add the dissolved gelatine to the curd mixture and pour into a mould (All ingredients must be at room temperature – otherwise the gelatine will cause the mixture to become “curdled”. The gelatine must not be too hot). I used a springform tin, which I lined with cling film inside.

  6. Allow to freeze in the refrigerator.
