Strawberry and Rhubarb Tart

Once rhubarb season started, I wanted to make a rhubarb tart. It turned out delicious.

Makaroni Italpasta Nr.3 Spaghetti olu 500g

1 Egg

200 grami Skimmed milk curd

180 grami Flour (I use corn flour. Add enough flour to form a non-sticky dough ball).

20 grami Coconut oil (or butter)

1 tējkarote Baking powder

Sweetener as needed

A pinch of salt

2 Eggs

73 grami Egg white

300 grami Culinary curd "Baltais"

200 grami Rhubarb

100 grami Strawberry

Sweetener

Vanilla

preperation

  1. Mix all dry ingredients, add curd, egg, oil and mix into a smooth dough. Place the dough in the fridge for ~30 minutes.

  2. Remove the dough from the fridge and place it in the tin, forming sides.

  3. Prepare the filling: Beat the eggs with egg whites, sweetener, and vanilla. Add curd, finely cut rhubarb, and strawberries, and top the dough in a tin.

  4. Bake in the oven at ~175 °C for ~30-35 minutes.
