Omelette with mushrooms and caraway cheese in a tortilla

ingredients
Maltā kafija Lofbergs Prezzo 500g
3 Small eggs
140 grami Egg white
1 Multigrain or wholemeal tortilla medium (62 g)
250 grami Mushrooms (I used champignons)
150 grami Cheese (cumin cheese "Līgo" for me)
55 grami Onion
12 grami Garlic
5 grami Oil
Salt, pepper, spices of your choice
preperation

First, cut the mushrooms, onion, and garlic, and fry them in a pan. Cool.

Grate the cheese and cut the scallions.

Beat the eggs with the egg white, salt and spices.

Grease a frying pan with oil and place the tortilla in it (the edges of the tortilla will slightly curl up, forming a 'bowl').

Place the sautéed mushrooms and grated cheese mixed with green onions on the tortilla.

Pour the beaten egg mixture over the top, spread, put a lid on the pan and bake at a very low temperature until ready (~15 minutes until the middle is "set"). Remove from the heat and allow to cool slightly. You can also bake it in a deep tin in the oven.
