Curd Pie with Raspberries (with pea protein)

300 grams Svaigas avenes

400 grams Dabīgais jogurts "Skyr"

250 grams Vājpiena biezpiens

35 grams Kukurūzas ciete

25 grams Zirņu proteīns (vai kukurūzas ciete)

8 grams Vaniļas cukurs

  1. Add egg, kefir, protein powder, and sweetener to the oat flakes and leave aside to swell for ~20 minutes.

  2. Place all the topping ingredients (except the raspberries) in a bowl and blend with a blender.

  3. Pour the oat flake mixture into the mould and smooth it out. Bake in the oven at 180 °C for ~15 minutes (to slightly brown the top).

  4. Remove the base from the oven, top with raspberries and pour over the blended curd mixture. Smooth the surface.

  5. Return to the oven and bake at ~170-175 °C for ~40-45 minutes, until the top is lightly browned.
