Muffins with spinach, zucchini and cheese

Now and then, some rather odd ideas pop into my head, but I’m delighted with the result – delicious!

2 Olas

200 grams Kabacis vai cukini

100 grams Pilngraudu kviešu milti

50 grams Turku zirņu milti

70 grams Tējas siers vai jebkurš cits liess siers

60 grams Spināti

1 tējkarote Cepamais pulveris

preperation

  1. Place the eggs, spinach, and cut zucchini in a blender. Blend everything until smooth.

  2. Add the grated cheese, flour, baking powder and seasoning.

  3. Pour the mixture into silicone moulds or a single large mould.

  4. Bake in an oven preheated to 180 °C for ~35–40 minutes.
