  1. Beat the eggs, add the salt, spices and scallions and pour into a preheated frying pan (28 cm) lightly greased with oil.

  3. Turn the omelette over, sprinkle with the grated cheese, place the sliced spinach on top, put the lid on the pan and let the tortilla cook a little from underneath. Then fold over and remove from the pan.
