Pumpkin Muffins with Dried Cranberries and Walnuts

Charming, delicious muffins that smell like gingerbread… and all sorts of other treats!

Borščs Kok ukraiņu ar pupiņām 500g

2 Olas

300 grams Ķirbis

80 grams Kukurūzas milti (var izmantot arī kviešu pilngraudu miltus)

30 grams Auzu klijas

50 grams Žāvētas dzērvenes

40 grams Valrieksti

10 grams Cepamais pulveris

5 grams Piparkūku garšviela

  1. Cut the pumpkin into small pieces and microwave for 5 minutes (or sauté in a saucepan on the stove). Let it cool, then blend into a puree.

  2. Mix all the dry ingredients: flour, oat bran, baking powder, and gingerbread spice.

  3. Add the eggs to the pumpkin mixture and blend until smooth with a blender.

  4. Add the dry ingredients. Finally, stir in the cranberries and chopped nuts. 

  5. Mix the batter thoroughly, then divide it evenly between four moulds and bake in the oven at 170–175 °C for approximately 40 minutes.
