preperation

  1. Peel the avocado, cut it up, mash it, and drizzle with lemon juice.

  2. Add the yoghurt, chopped herbs, garlic, salt, and spices. Blend all the sauce ingredients until smooth.

  3. Rinse the noodles thoroughly with cold water.

  4. Grate the zucchini using a special grater, or cut it into thin strips with a knife.

  5. Place the grated zucchini in a large bowl, add salt, lemon pepper, and spices, and mix everything.

  6. Place the zucchini, cut cherry tomatoes, and konjac noodles in a very hot pan and stir-fry quickly (~3 minutes). The shorter the stir-fry time, the crispier the zucchini will be!

  7. Add the avocado-spinach sauce and stir.
