Apple Crumb Cake

Well, this is absolutely delicious!!! It tastes just like when I was a child! So, so delicious! This is a recipe that you can’t make ‘guilt-free’. But, well, as long as you don’t go overboard…

Džems Bonne Maman vīģu 370g

2 Olu dzeltenumi

300 grams Milti (150 g pilngraudu kviešu, 100 g pilngraudu auzu milti)

100 grams Sviests

70 grams Brūnais cukurs

50 grams Zaļo griķu milti)

80 grams Eritritols

4 grams Cepamais pulveris

Džems Bonne Maman vīģu 370g

640 grams Āboli (jau nomizoti, bez serdes)

30 grams Kļavu lapu sīrups

30 grams Eritritols

6 grams Kanēlis

preperation

  1. Peel the apples, cut them into small pieces, place them in a pan, add the cinnamon, syrup and erythritol, and stir whilst simmering until soft. Set aside.

  2. Put 300 g of flour, sugar, erythritol and baking powder into a bowl.

  3. Roll the cold butter in flour and grate it using a coarse grater.

  4. Add 2 egg yolks (the egg whites can be used for an omelette for breakfast one morning) and mix everything by hand, forming crumbs.

  5. Spread half of the crumbs over the base of the tin, forming small ‘rims’ around the edges. Press down lightly.

  6. Place the apples on top, sprinkle the remaining crumbs over them and smooth the surface.

  7. Bake in the oven at 180 °C for ~40–45 minutes, until the surface turns slightly golden.
