Curd Pie with Raspberries (with pea protein)

3 Small eggs

200 grami Skimmed milk kefir

100 grami Oat flakes

35 grami Pea protein with vanilla flavour

1 tējkarote Baking powder

Sweetener of your choice

2 Small eggs

150 grami Egg white

300 grami Fresh raspberries

400 grami Natural yoghurt "Skyr"

250 grami Skimmed milk curd

35 grami Corn starch

25 grami Pea protein (or corn starch)

8 grami Vanilla sugar

Sweetener of your choice

preperation

  1. Add egg, kefir, protein powder, and sweetener to the oat flakes and leave aside to swell for ~20 minutes.

  2. Place all the topping ingredients (except the raspberries) in a bowl and blend with a blender.

  3. Pour the oat flake mixture into the mould and smooth it out. Bake in the oven at 180 °C for ~15 minutes (to slightly brown the top).

  4. Remove the base from the oven, top with raspberries and pour over the blended curd mixture. Smooth the surface.

  5. Return to the oven and bake at ~170-175 °C for ~40-45 minutes, until the top is lightly browned.
